Flavor Notes
Ripe kiwi, lime, and bright acid balanced by a resinous flavor and mid-palate weight from time spent in the barrel. Light on its feet, this wine shows complex maturity through strategic lees and oak contact.
Philosophy
The Stückfass Riesling is inspired by the delicate, lower alcohol Kabinett Rieslings of Germany. Lees aging in oak Doppelstücks softens the wine and adds mid-palate texture. While Riesling is known for its edgy acidity, we look to traditional methods of oak aging in large vessels to create a softer result. Winemaker Sean O’Keefe created the Stückfass as an exploration into different dry Riesling styles, focusing on building texture through oak, lees, and tempered acidity.
Pairings
This is a food friendly wine with a texture that can stand up to smoked trout or whitefish and fried foods like chicken or potatoes.
Vinification
The grapes were harvested October 13th, 2021 and whole-cluster pressed to minimize skin extraction. The wine started fermenting in a temperature controlled stainless steel tank, and once fermentation was slightly past peak the wine was transferred to a single 2500L Doppelstück to finish. After fully fermenting dry, the wine remained in the Doppelstück aging on its gross lees 14 months until it was racked and bottled on February 2nd 2023.
Suggested Cellaring
This style of Riesling will age very well. While tasting perfect right now, this wine will age for decades if cellared properly.
